Avocado Pesto
Avocados make for a super thick and creamy pesto sauce or spread.
Avocado Pesto
Ingredients
- 3 avocados, pitted and peeled
- 2 cloves garlic, peeled and chopped
- 2 cups basil leaves
- 2 tbsp pine nuts
- zest of a lemon
- juice of a lemon
- 2 tbsp grated parmesan
Combine all ingredients in the bowl of a food processor. Blend until smooth. Season to taste with salt and pepper.
Store in an airtight container. Cover the surface of the pesto with a piece of plastic wrap to keep the avocados from browning. Consume within the next few days.
Makes 1 1/2 cups
Notes from the Chef:
-Use pesto as is for a cream spread on sandwiches or over a piece of baked salmon
-Thin with a bit of milk or pasta water for a tasty pesto sauce
