Caprese Turkey Sliders
Ingredients
- 1/4 cup onions, minced
- 1lb ground turkey
- 2 tbsp grated parmesan cheese
- 1 tbsp Worcestershire sauce
- 8 mini ciabatta rolls
- garlic powder
- olive oil
- 1/2 cup avocado pesto
- 2 tbsp milk
- 8 thick slices fresh mozzarella
- 8 thick slices tomato
In a large mixing bowl, combine the onions, turkey, parmesan, and Worcestershire. Season mixture with salt and pepper to taste. Form 8 equal slider patties.
In a large skillet, heat 1 tbsp olive oil over medium heat. Place the patties in the skillet. Cook for roughly 5 minutes per side until the meat is cooked through - center should be firm but not hard to the touch. Cover the pan while cooking to ensure the meat has the opportunity to cook through. Place the mozzarella slices over top of each patty during the last few seconds of cooking to melt slightly.
While the sliders are cooking, slice the rolls in half and place on a pan. Sprinkle with a touch of olive oil, salt, pepper, and garlic powder. Broil in the oven until golden brown - about 3-5 minutes.
In a small bowl, stir together and pesto and milk.
Assemble the sliders - place a patty on the bottom half of each roll. Top with a slice of tomato. Season with pepper. Spoon a dollop of pesto sauce over each slider. Finish with the top half of the rolls.
Serves 4
Notes from the Chef:
-If you have it on hand, a handful of arugula would make for a nice peppery kick on the slider.
-Feel free to substitute ground beef for turkey.
