Cranberry Almond Power Bites
For a poppable protein snack, I enjoy these almond butter balls. These bites curb my hunger and a sweet tooth!
Cranberry Almond Power Bites
Ingredients
- 1/4 cup reduced sugar craisins
- zest of 1 orange
- 1 tsp chia seeds
- 1 1/2 cup almond butter
- 1/2 cup shredded coconut
In a mixing bowl, combine the craisins and orange zest. Add just a few drops of water to the bowl, and microwave for 15 seconds to partially re-hydrate the craisins.
To the same bowl, add the chia seeds and almond butter. Stir until thoroughly combined. Using a small cookie scoop, spoon out about 1 tbsp of the mixture. Roll into a ball and cover in the shredded coconut. Repeat with the remaining mixture. Place the balls onto a place in a single layer. Chill for at least 1 hour.
Store the balls in an airtight container in the fridge.
Makes 10 balls
