German Chocolate Brownie Bites





Think rich, fudgy, and decadent and you've got these brownies. Box brownies are taken to the next level with a sweet coconut and pecan caramel frosting. 

German Chocolate Brownie Bites

Ingredients
  • your favorite boxed brownie mix, plus eggs, oil and water
  • 2/3 cup milk
  • 2 egg yolks
  • 1/2 cup brown sugar, packed
  • 2 tbsp butter, melted
  • 2 tbsp light corn syrup
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 1 cup sweetened, shredded coconut
  • 1 cup pecans, chopped fine
Prepare the brownies per the recipe on the box. Liberally grease a muffin pan, and fill each cup about two-thirds full with the brownie mix. Bake brownies for 22 to 25 minutes until a toothpick comes out almost clean. Careful not to over-bake! Cool completely. Carefully remove brownies from the pan and store in airtight container.

In a small sauce pot, whisk together the milk, egg yolks, butter, syrup, vanilla and salt. Over medium heat, continually whisk the mixture until the caramel thickens - about 5 to 6 minutes. The caramel should coat the back of a spoon when ready. Pour into a small mixing bowl, and cool completely. 

Using a spatula, mix the coconut and pecans into the cooled caramel. Chill in the fridge for 1 to 2 hours until the frosting is thick. 

Spoon about 1 tbsp of the caramel over the top of each brownie cup. 

Makes 1 dozen

Notes from the Chef
-I like the brownie cups because it makes for a cleaner presentation, but by all means bake up a 13x9 pan and smear the frosting over the top!
-These truly are very decadent, so you may want to consider using a mini muffin tin
-If you omit the coconut and pecans, you'll find yourself with a truly luxurious caramel sauce desserts
