Curried Chicken Salad Salad
I love a good hoagie roll just as much as the next person, but every now and then I need to pass on the bread for the sake of my hips. The chicken salad is light and flavorful, and serves as a dressing over a bed of crisp fruits and vegetables.
Curried Chicken Salad Salad
Ingredients
- 1/2 lb pulled, roasted chicken
- 2 tbsp red onion, diced
- 1 stalk celery, diced
- 1/4 cup red grapes, halved
- 1 tbsp slivered almonds
- 3 tbsp lite sour cream
- 3 tbsp lite mayo
- 1/2 tbsp apple cider vinegar
- 1/4 tsp salt
- 1 tsp curry powder
- 1/2 tsp coriander
- 1/4 tsp ginger
- 1/4 tsp cumin
- 1/2 tsp brown sugar
- 1/4 tsp black pepper
- 3 cups spinach
- 3 cups butter lettuce
- 1 apple, sliced thin
- 1 cup cucumber, sliced thin
- 1 avocado, diced
Combine the chicken, onion, celery, grapes and almonds in a small bowl. In a separate bowl, whisk together the sour cream, mayo, vinegar, and spices. Pour the mayo mixture over the chicken and thoroughly mix.
In a large bowl, toss together the spinach, lettuce, apple, cucumber, and avocado.
Serve a large scoop of the chicken salad over a bed of the greens.
Serves 2
Notes from the Chef
-If you prefer a well-dressed salad, combine a splash of apple cider vinegar, honey, and dijon in the bottom of you salad bowl and toss with the greens.
-If preparing the chicken salad in advance, reserve the almonds until just before serving to ensure they remain crunchy
