Crockpot Thai Peanut Chicken
Ingredients
- 3 boneless, skinless chicken breasts
- 1 cup lite coconut milk
- 3/4 cup peanut butter
- 4 cloves garlic, minced
- 3 tbsp soy sauce
- juice of 2 limes
- 2 tbsp rice wine vinegar
- crushed red pepper
- 1 tbsp cornstarch
- chopped peanuts, cilantro, and lime wedges for garnish
Place the chicken in the bottom of a crockpot.
In a large bowl, whisk together remaining ingredients. Add crushed pepper to taste. Pour the sauce over the chicken.
Cook on high for 4 hours.
Serve over cooked rice and garnish with chopped peanuts, cilantro, and a lime wedge.
