Crockpot Thai Peanut Chicken






Take a break from your typical gloppy crockpot meals and serve up this creamy peanut dish. 

Crockpot Thai Peanut Chicken

Ingredients
  • 3 boneless, skinless chicken breasts
  • 1 cup lite coconut milk
  • 3/4 cup peanut butter
  • 4 cloves garlic, minced
  • 3 tbsp soy sauce
  • juice of 2 limes
  • 2 tbsp rice wine vinegar
  • crushed red pepper
  • 1 tbsp cornstarch
  • chopped peanuts, cilantro, and lime wedges for garnish 
Place the chicken in the bottom of a crockpot. 

In a large bowl, whisk together remaining ingredients. Add crushed pepper to taste. Pour the sauce over the chicken.

Cook on high for 4 hours.

Serve over cooked rice and garnish with chopped peanuts, cilantro, and a lime wedge.

-To cut some calories, sub the peanut butter for peanut butter powder
