Summer Broccoli Slaw
I could wolf-down bowls of this creamy, crunchy slaw. A fresh take on a typical BBQ buffet staple.
Summer Broccoli Slaw
Ingredients
- 6 cups broccoli slaw
- 1/2 cup light mayo
- 1/4 cup apple cider vinegar
- 1 tsp celery seed
- 3 tbsp sugar
- 1 package of ramen noodles, uncooked
- 1/4 cup sunflower seeds
- 1/2 cup dried cranberries
In the bottom of a large bowl, whisk together the mayo, vinegar, celery seed, and sugar. Season to taste with salt and pepper. Taste the dressing - add more vinegar or sugar per your taste. Add the slaw. Crush the ramen noodles over the slaw. Discard the seasoning packet. Add the sunflower seeds and cranberries. Toss slaw until thoroughly combined. Chill for at least 2 hours before serving.
Serves 6-8
Notes from the Chef:
-If the slaw appear dry, add a touch more mayo and vinegar
-This slaw only gets better with time once the dressing has a chance to really meld with the slaw
-If you're anti-mayo, consider subbing a couple tablespoons of olive oil, pureed avocado, or plain yogurt
