Stuffed Pepper Bake







Think deconstructed stuffed peppers topped with cheese and baked.

Stuffed Pepper Bake

Ingredients
  • 1 1/3 cup brown rice, uncooked
  • 1 tbsp olive oil
  • 1lb ground turkey
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 green peppers, diced
  • 2 red peppers, diced
  • 1/2 tsp dried oregano 
  • 2 tbsp worcestershire sauce
  • 1 can diced tomatoes, drained
  • 4 tbsp tomato paste
  • 1/2 cup parmesan, grated
  • 1/2 cup mozzarella, shredded
Prepare rice according to package instructions. Once cooked, set aside in a large mixing bowl.

Preheat oven to 400F.

Heat oil in large skillet. Crumble and brown turkey meat in pan over medium high heat. Add the onion, garlic, peppers, oregano, and worcestershire. Season to taste with salt and pepper. Cook for 5 minutes over medium heat. 

Add the tomatoes, tomato paste, parmesan and meat mixture to the bowl of rice. Stir thoroughly to combine. Season to taste with salt and pepper. 

Pour the mixture into a greased 13x9in pan. Top with mozzarella. Bake for 20-30 minutes until the cheese is bubbly and browned.

Serves 5-6

Notes from the Chef:
-If preparing casserole in advance and storing in fridge, cover pan with foil and bake at 425F for 75 minutes or until the center of the dish is heated through
-If you prefer softer peppers, sautee in the pan for an additional 10 minutes
