Italian Sausage and Peppers







To dress up a simple tomato sauce, I add sauteed peppers, onions and sausage.

Italian Sausage and Peppers

Ingredients
  • 1 tbsp olive oil
  • 4 Italian sausage links
  • 1/3 cup white wine
  • 1 onion, sliced thin
  • 2 green peppers, sliced thin
  • 2 red peppers, sliced thin
  • 4 cloves garlic, minced 
  • 1 cup tomato sauce
  • 1 tsp dried oregano 
  • parmesan
In a large skillet, heat olive oil. Remove the sausage from the casings and drop into the pan. Break into bit size pieces and fry until golden brown. Remove from the pan. Over medium-high heat, add the white wine. Simmer until the wine has evaporated. Add the onions, peppers, and garlic. Season with salt and pepper. Sautee until onions are translucent over medium heat. Return the sausage to the pan. Add the tomato sauce and oregano and reduce heat to low. Simmer for about 1 hour until the veggies are soft. Season to taste with salt and pepper.

Serve over spaghetti and finish with grated parmesan.

Serves 4

Notes from the Chef:
-If wanting to serve the sauce over a short noodle, such as penne or rotini, chop the peppers and onions
-If you enjoy a little heat, add a pinch of red pepper flakes to the sauce
