Thai Lettuce Wraps





I love carbs as much as the next stout Italian, but I have to tell you - I don't miss the tortilla in this dish. These Thai lettuces wraps are packed full of flavor and crisp textures.


Thai Lettuce Wraps

Ingredients
  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1/4 cup green onions, sliced
  • 1 red pepper, diced
  • 1 cup pineapple, diced
  • 1/4 cup shredded carrots
  • 1 clove garlic, minced
  • 3 tbsp hoisin sauce
  • 1 tbsp soy sauce
  • 1 tbsp rice wine vinegar 
  • 1 tsp sriracha 
  • 1/4 tsp ground ginger
  • 1/4 cup smooth peanut butter
  • 1/4 cup water
  • 8 large leaves romaine or butter lettuce
Heat olive oil in large skillet over medium high heat. Crumble turkey into the skillet and brown. Season with salt and pepper. Add onions, pepper, pineapple, carrots, and garlic. Sautee for 1-2 minutes. 

Stir in hoisin, soy, vinegar, sriracha and ginger. Simmer over low heat. Incorporate the peanut butter into the mixture. Add water until you reach your desired thickness. 

Spoon mixture into lettuce cups.

Serves 4

Notes from the Chef:
-I prefer romaine to butter lettuce as it holds up better against the warm turkey mixture, plus it has a nice crisp texture
-Alternatively, serve over a bed of steamed brown rice
