Turkey Meatballs
Traditional Italian meatballs are usually a mix of ground beef, pork, and veal. But for a lighter, weeknight recipe, I prefer serving up turkey meatballs. My grandfather is likely rolling in his grave, but they're delicious!
Turkey Meatballs
Ingredients
- 1 egg
- 1/2 cup panko bread crumbs
- 1/4 cup parmesan cheese, grated
- 2 tbsp fresh parsley, chopped fine
- 1 tsp garlic powder
- 1/2 medium onion, minced
- 2 lbs ground turkey
Preheat oven to 425F.
In the bottom of a large mixing bowl, whisk the egg white. Stir the bread crumbs into the egg. Mix in the cheese, parsley, garlic, and onion. Season mixture with salt and pepper. Add the ground turkey to the bowl. Using your hands, fold the bread crumb mixture into the turkey.
Using an ice cream scoop about 2 inches in diameter, form the meatballs. Roll each meatball in between the palm of your hands and then place on a greased baking sheet. Bake for 12 minutes.
For mini meatballs, simply use a smaller scoops and bake for 6-7 minutes.
Toss with tomato sauce and serve over spaghetti or alongside crusty bread. Or incorporate into your own recipe.
