Turkey Chili Baked Potato
An absolute weeknight favorite - lots of comfort flavors piled high on a steamy baked potato! Texans might be horrified to find turkey instead of beef, but I plan to live a good while longer.
Turkey Chili Baked Potato
Ingredients
- 4 medium gold potatoes
- 4 tbsp olive oil
- 1lb lean ground turkey
- 1/2 medium onion, diced
- 2 tbsp chili powder
- 2 tsp cumin
- 1 tsp garlic powder
- hot sauce to taste
- 8-10oz crushed tomatoes
Preheat oven to 425F.
Toss the potatoes in 2 tbsp olive oil and season with salt. Place on a baking sheet and bakes in the oven for 60 minutes.
Heat the remaining olive oil in a sauce pot. Crumble the turkey meat into the pot. Brown the meat. Add onions and cook until translucent. Add all seasonings and hot sauce. Season with salt and pepper to taste. Add enough crushed tomatoes to achieve desired thickness. Simmer on low, uncovered for 10-15 minutes.
Split the potato and top with a generous helping of the chili.
Serves 4

-Be sure and top this baby with fun things like cheese, sour cream, green onions, etc.
-Chili only gets better with time; this recipe makes for great leftovers!
