Thanksgiving Popovers





For a light holiday breakfast, cinnamon popovers are just perfect. A crisp, golden crust envelopes an airy custard pocket just waiting for a delectable filling or spread.


Thanksgiving Popovers

Ingredients 
  • 3 tbsp butter, melted
  • 2 egg
  • 1 cup milk, lukewarm
  • 1 tsp vanilla
  • 1 cup flour
  • 1 tsp salt
  • 1/2 tsp cinnamon
Preheat oven to 400F.

Using a pastry brush, coat 8 muffin tins with 1 tbsp of butter. Heat in the oven for 5 minutes.

In a blender, whip the eggs until they are pale yellow in color. Add the milk and vanilla. Blend in the flour, salt, cinnamon, and butter. Whip until smooth.

Divide the batter evenly among the 8 tins. Immediately return the pan to the oven. Bake for 35 minutes. Serve immediately.

Serves 4

Notes from the Chef:
-Serve with loads of pumpkin butter
-Disregard the vanilla and cinnamon and serve alongside your Thanksgiving turkey for a neat dinner roll
