Turkey Meatloaf
Meatloaf doesn't always conjure up smiles - I suspect it's due to one's mom cooking the crap out of it. This turkey meatloaf has a delightful texture, and so long as you adhere to the cook time, it will be plenty moist.
Turkey Meatloaf
Ingredients
- 1/4 cup breadcrumbs
- 1 egg
- 3 tbsp grated parmesan cheese
- 1/4 tsp salt
- 1/2 tsp pepper
- 1/4 tsp garlic powder
- 1/2 medium onion, minced
- 2 tbsp parsley, chopped
- 4 tbsp ketchup
- 1 lb ground turkey
In a large mixing bowl, stir together everything but the ketchup and turkey. Add 1 tbsp of ketchup. Mix in the ground turkey. Ensure the breadcrumb mixture is fairly evenly distributed into the meat.
Preheat oven to 325F.
Line a baking sheet with foil and grease. Transfer the meat to the pan. Form a loaf about 8-9in long and 3in high in the middle of the pan. Spread the remaining ketchup over the top of the loaf.
Bake for 60 minutes or until the internal temperature of the loaf reads 160F.

Notes from the Chef:
-For an added bit of delicious flavor, add about 1/4 cup feta and 2 tbsp minced sundried tomatoes to the meat mixture.... you'll thank me later
-Instead of topping the meatloaf with ketchup, serve with a savory brown gravy. Yum!
