Chocolate Pizzelles
Pizzelles make for the perfect excuse to eat cookies for breakfast. Thin and crisp with just a touch of sweetness.
Chocolate Pizzelles
Ingredients
- 3 eggs
- 1 cup sugar
- 1/2 cup butter, melted
- 1 tbsp vanilla
- 1/4 tsp almond extract
- 1 3/4 cup flour
- 2 1/4 tsp baking powder
- 1/4 cup cocoa
Preheat a pizzelle iron.
Whisk together the eggs, sugar, butter, and extracts. Sift together the flour, baking powder, and cocoa and add to the egg mixture.
Grease the iron with cooking spray. Using a small 1in cookie scoop, spoon a dollop of the batter onto the pizzelle iron. Firmly close the iron and cook for 30 seconds. Using a thin spatula, remove the
cookie from the iron and allow to cool on a wire rack.

Makes 30 5in cookies
Notes from the Chef
-For something a bit fancier, immediately after removing the cookie from the iron, form a cone. Fill with whipped cream just before serving.
-Sandwich cookies with nutella or thick caramel for a stroopwafel-type spin
