Turkey Burger Bruschetta
Think classic bruschetta appetizer but served over a juicy burger.
Turkey Burger Bruschetta
Ingredients
- 1lb ground turkey
- 1/4 cup minced onion
- 1/2 tsp worchestershire sauce
- 1/2 cup shredded mozzarella
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 2 tbsp basil, julienned
- 1 tsp balsamic vinegar
- 4 slices bread
- 1 tbsp butter, softened
- garlic powder
In a mixing bowl, combine the turkey, onion and worchestershire. Season with salt and pepper. Form 4 equal patties.
Heat a large, non-stick skillet over medium high heat. Lightly coat with non-stick spray. Place the burgers in the pan. Cover and cook for 5 minutes until the first side is golden brown. Flip the burgers, top with cheese, and reduce the pan to medium heat. Cook for another 7 to 10 minutes until the center of the burgers are cooked through.
While the burgers are cooking, combine the tomatoes, garlic, basil, and vinegar in a small bowl. Season to taste with salt and pepper.
Just a few minutes before the burgers are ready, spread each piece of bread with butter and season with garlic powder and salt. Toast until golden brown.
Serve the burgers on the bread slices and top with a spoonful of the tomato mixture.

Notes from the Chef
-When looking to keep it light, I reach for low-calorie wheat bread, but frankly this would be best on a toasty piece of ciabatta or focaccia
