Estrella Navidads






Think shortbread met a churro and had a cookie baby. A Christmas spin on a Mexican hojarascas.


Estrella Navidads 

Ingredients
  • 1/2 cup butter, softened
  • 1 cup sugar, split
  • 1 egg white
  • 3 tbsp cinnamon, split
  • 1/2 tbsp baking powder
  • 1 1/2 cup flour
Using a stand mixer, cream together butter with 1/2 cup sugar. Scrape down the bowl, and mix in the egg white. Scrape down the bowl, and add 1 tbsp cinnamon, baking powder, and flour. The mixture may resemble a course sand. At this point, you may need to use your hands to work the dough into a bowl. Add a few drops of water if the mixture is still too crumbly. Form a disk and cover with plastic wrap. Chill for at least 1 hour.

Preheat oven to 375F.
Flour a work surface. Using a rolling pin, roll the dough out to about 1/2in thickness. Using a star shaped cutter, stamp out the cookies. Place the cookies on a grease baking sheet. Bake for about 12
minutes. 

While baking, combine the remaining sugar and cinnamon in a shallow dish. Shortly after removing the cookies from the oven, toss each cookie in the cinnamon sugar mixture. The cookies must still be warm in order for the sugar to stick. 

Makes 16 cookies
